The idea for this recipe has been in my notes for well over a year and I finally got around to creating and sharing it! This Espresso Yourself Smoothie is inspired by all the cold cups of coffee that have been repeatedly reheated in the last year of working from home. It also pays tribute to the leftover coffee in the pot that ends up wasted down the drain. May as well utilize the cold cup of joe by repurposing it into a delicious smoothie!
With this warm weather lending its way to the season of iced coffees, this is a fun twist on a classic.
I do love incorporating vegetables into my smoothies when I can, especially when they don’t impact the flavour. Not only do you get some extra bulk with the frozen cauliflower, but it actually provides quite a bit of vitamin C too! That being said, if you’re not a fan of cauliflower, or just don’t have it available, feel free to use the equivalent amount of ice. The texture just may be a touch different.
Depending on your flavour combination preferences, you can also mix it up with the optional cocoa powder. Chocolate and coffee are just meant to be together, right?
So, if you are looking for an energizing morning smoothie or a pick-me-up midday give this a try! How about using decaf coffee and enjoying it as an evening treat? Or devour it as a smoothie bowl, topped with my Vanilla Coconut Granola. Refreshing, tasty, nutritious and caffeinated. Espresso yourself in whatever way suits you best.
