The idea for this recipe was spurred after a trip to Whole Foods here in Vancouver. It was back in the summer when the restrictions were a bit lighter and we could socialize more. I met up with two of my good friends to socialize outside and enjoy time together. We stopped at Whole Foods to pick up some dinner to go and a couple of treats for dessert. One of these treats was their vegan chocolate mousse. I was so impressed and needed to know what it was made from. To my surprise, the ingredient list was very small and started with tofu!
Tofu hasn’t been a trendy ingredient for the general public but I hope it soon gets the credit it deserves. Tofu is an incredible source of plant-based protein and with a very mild taste, it takes on the flavour of whatever it is mixed with.
I chose to keep this mousse completely plant-based for my vegetarian and vegan friends. If you don’t follow a strict vegan diet, you can use honey instead of maple syrup for the sweetener.
This is the perfect dessert or snack for you and your sweetheart this Valentine’s Day (or you and yourself). But I hope you love it so much that you make it more than once a year! Enjoy and Happy Valentine’s Day!
