Save time each morning by making this quick and easy Apple Pie Overnight Oats. This breakfast is creamy, flavourful & packed with nutrients that will keep you full and satisfied for hours!
Apples are coming out the ying-yang at my household after a haul at the orchard! So I’m trying to use them any way I can: breakfast, lunch, dinner and dessert! If you don’t know this already, I am a huge fan of overnight oats, especially when I know I’m going to be in a rush to get out the door in the morning. So coming up with this fall-inspired breakfast was a no brainer.
This Apple Pie Overnight Oats has the best of everything: creaminess from the soaked oats, crunch from the apple, flavour from the cinnamon and maple syrup, and of course the variety of nutrients. We’re talking protein, healthy fats and fibre!
Here are the main ingredients for this Apple Pie Overnight Oatmeal:
Feel free to add your own additional toppings to take this breakfast to the next level. Some of my favourites are peanut or almond butter, chopped almonds or walnuts or some extra sweetener.Ā
As the title suggests, the most ideal texture is achieved by allowing the oats and chia seeds to soak overnight. However, if you don’t have the opportunity to leave it this long, keeping it in the fridge for about an hour will give similar results.Ā
If you aren’t in the mood for apple pie flavour, you can still use the base ingredients to create a delicious breakfast! Start with the oats, chia seeds, yogurt and milk and then use whatever fruits or toppings you have! For more inspiration and flavour ideas, check out my free Overnight Oats eBook that’s available by subscribing to my newsletter.Ā
Try it out and let me know how it goes! My guess is it will be a new favourite.

Hi, would I be able to use quick cooking oats instead of large flake oats?
Hi Nicole! Yes you can absolutely use quick cooking oats. It will be smoother consistency but will still work just fine.
Loved this. Forgot to add any additional toppings so will have to do so next time.
Thanks so much for trying this Jody! I’m glad you liked it and hope you give it another try with the toppings š
