This recipe post has been sponsored by Yupik. This Vegetarian Yellow Split Pea Soup is easy-to make, packed with plant-based protein and fibre, which will keep you full & cozy this winter.
It’s officially soup season and I could not be more excited. I love to spend a couple of hours on the weekend cooking batches of soups and stews and then keep in the fridge or freezer. They are the perfect option for the nights that you don’t have the time or energy to create a full meal!
This soup doesn’t require many ingredients, and it’s likely you will already have most of them as staples in your kitchen! Here’s what you need:
Whenever I create a soup recipe, I aim for it to contain a variety of nutrients. There are too many soups that leave you feeling hungry within an hour of eating it. I know you live a busy life so the meals we consume need to be filling and energizing! This Vegetarian Yellow Split Pea Soup is just that.
Did you know that 1 cup of yellow split peas provides a whopping
Both fibre and protein do a great job at keeping us full and satisfied after a meal. Fibre also supports our digestive system, keeping things moving smoothly. The plant-based protein is a great way to reduce saturated fat in our diet while still meeting our protein needs.
Yellow split peas are also rich in B vitamins and minerals like iron, magnesium, zinc & more!
And that’s just the split peas. When we add in ingredients like carrots and cauliflower, the overall fibre and vitamin content is boosted even more!
Finally, because there’s a nice balance between vegetable broth and water as the liquid, the sodium content is reduced. This can help support blood pressure levels and heart health.
In this recipe, it’s extremely easy to cook the yellow split peas. Once they are added to the large pot, along with the vegetable broth and water, they naturally cook while the soup is simmering.
We love a no fuss, one-pot meal!
Thank you to Yupik for sponsoring this recipe post and providing the split peas in this Vegetarian Yellow Split Pea Soup.
