Make this Raspberry Coconut Oatmeal whenever you need to brighten up your day with colour and flavour! Plus, it’s a breakfast that is perfectly on brand for Valentine’s Day.
How do you like to spend Valentine’s Day? Are you a lovey-dovey type with your significant other or would you rather spend the day with your close family and friends? Or perhaps you are filling up your own cup with self care and love. How ever you choose to spend the day, I hope it’s filled with lots of delicious food, like this Raspberry Coconut Oatmeal. And don’t forget the slivered almond hearts on top!
Oatmeal is a standard comfort breakfast food but sometimes it needs a little sprucing up. I prefer this pretty-in-pink version because it brightens up the morning without too much extra hassle. Colour, taste and comfort is all it takes to be sold on this delicious morning meal.
The main ingredients you need for this recipe are:
Using coconut milk in oatmeal is a great way to add a creamy texture to your breakfast. Coconut milk is also dairy-free, so a great option for anyone that is lactose-intolerant or prefers a non-dairy milk.
If you want the same flavour but a lower fat content, consider opting for a light coconut milk.
This oatmeal is really versatile and can be a vessel for a bunch of toppings. Here are some of my favourite that I recommend you try!
