Introducing the creamy, coconut-y and filling version of traditional oatmeal. This Coconut Quinoa Porridge checks off all the boxes! Using quinoa in a sweet recipe instead of savoury is sure to be a pleasant surprise.
If you have been around long enough to remember the first eBook I released with my friend, Kendall, you may recognize this recipe. We created it to mix up the breakfast game: by incorporating coconut milk it adds a different dimension to a breakfast bowl. Plus, the pairing of quinoa and coconut is a comforting combination that will quickly make its way to the top of your list.

My favourite toppings are sliced banana, blueberries, crushed walnuts and a dollop of Greek yogurt. You can also add in some nut butter and extra coconut flakes to really bring home the coconut flavour.

If your time is money and you don’t have 20 minutes to spare to make this Coconut Quinoa Porridge in the morning, don’t worry! You can make a big batch the night before and store it in the fridge overnight. In order to cook larger amounts increase the cook time by approximately 5 minutes. Feel free to also add a little extra coconut milk to the cooled porridge to achieve the desired texture.
By cooking it this way, you can prepare your breakfast in advance and save time and effort on your busy mornings! This method also gives you the flexibility to mix up the toppings each day, depending on your cravings!
