Some of the biggest road blocks to healthy eating are time constraints, complicated steps and lack of flavour. This marinade takes the hassle and frustration out of the picture and leaves you with a flavourful protein that you can make into a variety of dishes. Enjoy it with a salad, stir fry, or as a main feature to side vegetables or whole grains.
In a small bowl, combine lemon juice, soya sauce, sesame oil and dijon mustard. Mix well.
Place both chicken breasts in a greased 8×8 Pyrex dish. Add the marinade and massage it into the chicken. To enhance the flavour, let the chicken sit for 1-2 hours before cooking.
Sprinkle basil and ground pepper on top of the marinated chicken breasts. Place in the oven and cook for 25-30 minutes.
Once cooked, remove the chicken from the oven and serve with your choice of side dish. Enjoy!
