Although April is a typical time for a lot of rain, we seem to be in the thick of it this week and I’m seriously missing the sun! So since we can’t control the weather, I thought it would be nice to bake something that brings a little bit of sunshine inside. This Orange Yogurt Loaf with Vanilla Glaze is such a nice change to winter baking. It’s light, bright and so delicious! I can’t wait for you to try it.
Orange Yogurt Loaf Ingredients
The ingredient list for this loaf is pretty straight forward. All you need is:
- Eggs
- If you want to make this loaf vegan, you can try using flax eggs instead.
- Greek yogurt
- This Greek yogurt (and the eggs) are the major sources of protein in this loaf. I recommend using plain Greek yogurt, since a lot of sweetness comes from the sugar and glaze. However, if you prefer to use a vanilla or even a lemon Greek yogurt, they would work nicely too.
- Using Greek yogurt creates a nice moist texture to the loaf so don’t skip it!
- If you want to make this loaf vegan, you can opt for a plant-based neutral-tasting yogurt.
- Oil
- I have used both vegetable oil and a mild olive oil in this recipe and they both work. If you do opt for olive oil, please ensure it is a mild flavour so that it doesn’t overpower the other components.
- Flour
- You can use an all-purpose flour in this recipe.
- If you want to make this a gluten-free loaf, I recommend Bob’s Red Mill 1-to-1 gluten-free flour. Use the same amount that is called for in this recipe.
- Sugar
- This recipe doesn’t call for a ton of sugar since the vanilla glaze helps to provide an added touch of sweetness. If you prefer the loaf without the glaze, you do you!
- Orange zest
- Making use of the zest of the fruit is a great way to reduce food waste and get a punch of flavour. If you don’t have a zester, you can use the finest side of your box grater.
- Baking powder, baking soda and salt

How to Make Vanilla Glaze
Making the vanilla glaze is very simple. You only need 3 ingredients and can adjust the consistency easily. All you need to do is:
- In a small bowl, add the icing sugar, milk and vanilla extract.
- Using a whisk, mix this together until smooth.
- If you prefer a thinner consistency, add more milk 1 tsp at a time.
- If you want a thicker glaze, add more icing sugar, 1 tbsp at a time.
- When your desired consistency is achieved, set it aside until the loaf is done baking.
- Once the loaf is fully baked and has had time to cool (about 15-20 minutes), drizzle the glaze on top of the loaf. You can also add additional orange zest for decoration if you’d like.
Serving the Orange Yogurt Loaf
Once the loaf is fully cooked (double check by inserting a toothpick into the middle and ensuring it comes out clean), let it cool for 15-20 minutes. Then, remove the loaf from the pan and place on a plate or a cooling rack with a plate underneath. Take the prepared vanilla glaze and drizzle it on top of the loaf. The plate will catch the excess glaze that drips off. You can collect it and add it back on top of the loaf, save it for later or discard it.
Feel free to add some extra orange zest or slices on top for added flavour and decoration. You can dive in immediately or wait until the glaze hardens before slicing into it.

- 3 eggs
- 1 cup plain Greek yogurt
- 1/2 cup olive oil or vegetable oil
- 1 1/2 cup all purpose flour
- 2/3 cup granulated sugar
- 2 tbsp orange zest
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Vanilla Glaze
- 1 cup icing sugar
- 2 tbsp milk
- 1/4 tsp vanilla extract
Preheat your oven to 325°F and use butter or cooking spray to grease a large loaf pan.
In a large bowl, using a hand- or stand mixer, beat the eggs and sugar together until the mixture is pale and thick. This may take 3-4 minutes. Add the Greek yogurt and orange zest. Beat again to combine.
Slowly add the olive oil in a steady stream while the mixer remains on medium speed and continue until the batter is well combined. Set this mixture aside.
In a separate bowl, combine the flour, baking soda, baking powder, and salt. Add this to the wet ingredients and mix gently until just combined.
Pour the batter into your prepared loaf pan and bake for 40-50 minutes or until an inserted toothpick comes out clean. Let it cool for 15-20 minutes, remove from the pan and drizzle the vanilla glaze on top. Serve and enjoy!
