This Coconut Almond Granola is a satisfying way to start your morning. It adds texture and flavour to your smoothie bowls, oatmeal or yogurt!
Have you ever finished a meal and noticed that even though you had a decent portion, you don’t actually feel satisfied? I have definitely been there! There are many things to consider in this situation, but one of the first is the texture of the food. Was the meal all one consistency? Did it feel mushy or dry? This can have a big impact on how content we feel after eating.
This Coconut Almond Granola is a delicious and easy way to achieve that perfect crunch that can round out a meal.
This recipe is super simple and takes only 15 minutes to prepare the ingredients. All you have to do it mix together the dry ingredients (nuts, seeds, oats, shredded coconut, cinnamon and salt) in one bowl. In another bowl whisk together the wet ingredients (coconut milk, maple syrup, almond butter and vanilla). Stir the dry and wet ingredients together until it is well incorporated and then spread out evenly on a baking sheet.
Here’s where the crunch factor comes into play. I recommend baking it anywhere between 30-45 minutes. It really depends on your texture preference and the strength of your oven. As always, start with baking it from ~30 minutes, mixing the granola half way through, and then add more time if you want it crunchier.
Although it takes a little bit more effort than buying the granola from the store, making it at home is a great option. You know exactly what is going into it, you can adjust the flavours as you like and it’s typically cheaper as a bulk recipe!
