These Almond Butter Ginger Molasses Cookies are the tastiest way to ring in the month of December! They are rich and chewy but melt in your mouth all at the same time! They are the dessert to start the holiday season.
I can’t remember exactly how I came up with this recipe but I believe it started with my internship mentor. We were getting ready for the holiday break and she suggested I try her recipe for ginger molasses cookies. At the same time I had also come across a version of molasses cookies that contained almond butter. Mixing the two together resulted in this delicious dessert!
The diet culture messages ring strong during the holidays but I encourage you to try to challenge them. Giving yourself unconditional permission to eat all foods, especially the ones you enjoy, can be such a liberating feeling! This mentality tends to also reduce stress around food, which is so helpful during the holidays. You shouldn’t have to compromise flavour and enjoyment of food for a few less calories.
So let’s make these Almond Butter Ginger Molasses Cookies. All you need is:
The key step of this baking process is to freeze the dough for at least 1 hour before baking it. This will allow the cookie dough to firm up enough that it holds its shape in the oven.
One of my favourite parts of this cookie is the flavourful coating of cinnamon and ginger sugar. Just mix the three ingredients together, roll the uncooked cookie dough through the sugar and place on the cookie tray. It brings these cookies to the next level!
