In a small bowl combine the ingredients for the peanut lime sauce. Mix well and set aside.
In a frying pan or wok, heat the olive oil and sesame oil at medium-high heat. Add the chopped chicken breasts and season with salt and pepper. Cook for 6-7 minutes or until the pieces are cooked through.
In the meantime, bring a medium sized pot of water to boil. Add the rice noodles and cook according to the product's instructions. Drain the rice noodles and rinse with cold water to prevent clumping. Set aside.
To the chicken, add the sliced bell pepper and cook for another 2-3 minutes, or until the peppers are tender.
Use 1/4 cup of the peanut lime sauce and add it to the chicken and pepper mixture. Toss in the fresh spinach and mix well. Cook for 1-2 minutes, until the spinach is wilted.
Serve the chicken mixture over the rice noodles, drizzle extra peanut lime sauce on top and dress it with any additional toppings you like! Enjoy!
