In a small bowl, mason jar or mug whisk together the tahini, lemon juice and garlic.
The lemon juice will quickly thicken the tahini so wait until you are ready to serve the sauce to thin it out with water. Start by adding 1 tbsp of the water and whisking again, followed by 1 tsp at a time until you have reached the desired consistency.
Add a dash of salt and serve on top of your chosen dish or alongside it for individual portioning.
