1 Food processor or high speed blender
Ingredients
1cup2% cottage cheese
⅔cupmilk chocolate chips
1tbspcocoa powder
Instructions
Pour the chocolate chips into a microwave-safe dish and microwave in 20-30 second increments, stirring in between each, until it is fully melted.
Next, to a food processor or high speed blender, add the cottage cheese, melted chocolate and cocoa powder. Blend on high for 20-30 seconds. Use a spatula to scrape down the sides of the food processor or blender and then blend again until smooth.
Place the mousse in a dish (or divide it up into smaller individual dishes). You can eat it immediately or place it in the fridge for 30 minutes. This creates an even creamier and thicker texture.
Serve it with a dollop of whipped cream or a shaving of chocolate and your favourite fruit. Enjoy!
Notes
Substitutions:
Other cottage cheese options
Instead of 2% M.F. cottage cheese, you can opt for a lower fat option (ex. Fat free or 1%). However, the final product may not be as creamy.
You could also opt for a 4% M.F. cottage cheese for an extra creamy texture!
Semi-sweet or dark chocolate chips
Instead of milk chocolate chips, you can use semi-sweet or dark chocolate chips. You could also use mini chocolate chips!
I wouldn’t recommend using white chocolate chips because the coating on them prevents them from fully melting, and creates a clumpy chocolate mess.
Maple syrup or honey
You typically don’t need to add extra sugar since the chocolate chips provide the sweetness, but if you want to make it extra sweet, consider adding 1 teaspoon of maple syrup or honey and blending it up.
Vanilla extract
A small splash of vanilla extract can really add a lot of flavour to this mousse. Just be careful not to use too much or it will make the mousse too liquidy.
Dietary considerations:
This mousse is naturally gluten free (as long as you use gluten free chocolate chips), nut free and vegetarian.
Lactose free: opt for a lactose free cottage cheese and dairy free chocolate chips.
Vegan: you would need to source a vegan cottage cheese, which I have yet to find on the shelves. Please let me know if you have a brand or product in mind!
