To a food processor, add the walnuts, cashews, dates, shredded coconut, coconut oil, vanilla extract and salt. Blend for at least 20-30 seconds, or until combined and crumbly.
Pour the nut mixture into a greased 6x6" square pan and press down firmly. It may seem too crumbly to become a crust but once it is pressed into the pan, it sticks together quite well. If you want to add 1-2 tsp of water just to be sure, you can do that too. You may want to use a spatula or the base of a measuring cup to help evenly press the nut mixture into the base of the pan. Set to the side.
In a small bowl, add the chocolate chips and coconut oil. Microwave in 30 second increments, stirring between each, until the chocolate is melted.
Pour the melted chocolate overtop of the nut mixture and spread it out evenly.
Transfer the pan to the fridge for at least 2 hours, the freezer for at least 1 hour or until the chocolate coating has completely solidified.
Cut the square into 12 bars and store in the fridge or freezer until you are ready to enjoy!
