Make sure as much water is removed from the tofu as possible. Do this by pressing the tofu in between paper towels or tea towels for 5-10 minutes.
Add all ingredients to a food processor or high speed blender. Blend on high for 10-20 seconds. Scrape down the sides of the food processor with a spatula and then blend again for another 10-20 seconds or until the mixture is completely smooth and combined.
Transfer the mousse to an airtight container and store in the fridge for at least 1 hour to chill and set.
Serve with berries or vegan chocolate shavings and enjoy!
