PB & J Protein Bars

Ingredients

  • Heaping 1/3 cup Medjool dates pits removed
  • 1 1/2 cups large flake oats
  • 1 cup walnuts
  • 1/3 cup smooth peanut butter
  • 1/2 cup dried strawberries
  • 1/4-1/3 cup water added in increments

Instructions

  • In a food processor or high-speed blender, pulse the all the ingredients (except water) together until well combined.
  • Add in the water 1-2 tbsp at a time until you achieve desired consistency.
  • Press the batter into an 8 x 8" Pyrex dish and refrigerate for at least 1 hour.
  • Store in the fridge for 5-7 days or in the freezer for up to 3 months. Enjoy!
