Preheat oven to 375°F and prepare a mini muffin tin with cooking spray or muffin tin liners.
In a large bowl, add the wet ingredients and mix well. Set aside.
In a separate bowl, add all of the dry ingredients and stir together.
Add the dry ingredients to the wet ingredients and mix until well combined. Fold in the chocolate chips.
Distribute the batter amongst the mini muffin tin and bake for 15-18 minutes, or until golden brown. Let them cool for 5-10 minutes until removing from the tray. Enjoy!
Notes
To make into cookies: Prepare a baking sheet with cooking spray, parchment paper or a silicone tray liner. When the batter is mixed together, distribute golf ball-sized amounts evenly on the tray. Bake for 15 minutes or until golden brown.
For crunchy cookies, flatten the cookie mound prior to cooking and you may want to increase the bake time, depending on your texture preference.
To make into baked oatmeal casserole: Pour the batter into the greased 8x8 Pyrex dish and bake for 35-40 minutes, or until golden brown and an inserted toothpick comes out clean.
