Pumpkin Chocolate Chip Oatmeal Bites

Ingredients

  • 2 cup quick oats
  • 1/3 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 eggs
  • 1 medium banana mashed
  • 1/2 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1/3 cup chocolate chips

Instructions

  • Preheat oven to 375°F and prepare a mini muffin tin with cooking spray or muffin tin liners.
  • In a large bowl, add the wet ingredients and mix well. Set aside.
  • In a separate bowl, add all of the dry ingredients and stir together.
  • Add the dry ingredients to the wet ingredients and mix until well combined. Fold in the chocolate chips.
  • Distribute the batter amongst the mini muffin tin and bake for 15-18 minutes, or until golden brown. Let them cool for 5-10 minutes until removing from the tray. Enjoy!

Notes

To make into cookies: Prepare a baking sheet with cooking spray, parchment paper or a silicone tray liner. When the batter is mixed together, distribute golf ball-sized amounts evenly on the tray. Bake for 15 minutes or until golden brown.
  • For crunchy cookies, flatten the cookie mound prior to cooking and you may want to increase the bake time, depending on your texture preference.
To make into baked oatmeal casserole: Pour the batter into the greased 8x8 Pyrex dish and bake for 35-40 minutes, or until golden brown and an inserted toothpick comes out clean.
