Peanut Butter & Banana Creamy Oatm-egg

Ingredients

  • 1/3 cup large flake oats
  • 1/3 cup milk or plant-based beverage
  • 1/3 cup water
  • 1 egg
  • 1/4 tsp vanilla extract
  • 1 tbsp peanut butter
  • 1 banana sliced
  • 1/2 tsp cinnamon

Instructions

  • In a small pot, combine the oats, milk and water and bring to a boil. Once boiling, reduce to medium-low heat and simmer for 3-4 minutes. Cook until the oats have almost completely absorbed all of the liquid.
  • While the oats are cooking, whisk the egg in a separate small bowl.
  • Increase the heat of the oat mixture to medium-high. Slowly add in the whisked egg, stirring constantly. Continue until the oats and egg are well incorporated and the egg is cooked (you will see the egg turn white).
  • Remove the pot from the heat and stir in the vanilla extract.
  • Transfer the oatm-egg mixture to a small bowl and top with peanut butter, banana and cinnamon. Feel free to add any additional toppings you like and enjoy!
