Coconut Lime Crusted Halibut

Ingredients

  • 1 lb fresh halibut cut into 4 filets
  • 1 egg
  • 1/2 cup Panko bread crumbs
  • 1/2 cup unsweetened coconut flakes
  • Half of a lime zested
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400°F and line a baking sheet with tin foil.
  • In a bowl, whisk the egg and set aside.
  • In a separate bowl, mix the panko bread crumbs, coconut flakes, lime zest and garlic powder together. Spread this out evenly on a plate or a wide and shallow bowl.
  • Using one hand, place a halibut filet into the bowl with egg and drench it, then place the same filet on the plate with the dry mixture. Use your other hand to flip the filet on all sides to ensure it is fully covered in the coconut lime crust. Repeat this until all filets are coated.
  • Place the filets on the lined baking sheet and season with salt and pepper. Bake for 10-12 minutes or until the fish flakes.
  • Serve with your choice of side(s) and enjoy!
