Garlic Chicken Lettuce Wraps

Ingredients

  • 2 chicken breasts cut into bite-sized pieces
  • 1 head of romaine, Boston or iceberg lettuce
  • 1 red bell pepper diced
  • 1 cup celery diced
  • 1 cup carrots peeled and diced
  • 3 cups broccoli chopped
  • 2 tsp garlic minced
  • 1/2 tbsp vegetable seasoning ex. Clubhouse Garlic Plus spice blend
  • 1 tbsp poultry seasoning
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Soy sauce to taste
  • Sesame oil optional

Instructions

  • Coat a large pot or wok with 1 tbsp of vegetable oil and bring to medium heat. Add the minced garlic and cook until fragrant.
  • To this, add the vegetables and cover with a lid, checking on them and stirring every 2 minutes. After 5-6 minutes of cooking (or when the vegetables start to soften), sprinkle on the vegetable seasoning and stir again, turning the heat down to low.
  • While the vegetables are cooking, add the remaining 1 tbsp of vegetable oil to a separate large pan and bring to medium heat. Add the chicken and sauté until cooked through.
  • Once vegetables and chicken are fully cooked, transfer the chicken into the pot of vegetables, including the juices. Season with salt and pepper to taste.
  • Rinse the lettuce and pat with a paper towel to dry.
  • Scoop the chicken and vegetable mixture into a lettuce wrap and drizzle with desired amounts of soy sauce and sesame oil (optional). Enjoy!

Notes

Feel free to also add some cooked rice to the lettuce wraps if you would like to incorporate more whole grains.
