Ingredients
1540 ml canblack beansdrained and rinsed
2eggs
1/2cupgranulated sugar
1/3cupcocoa powder
3tbspvegetable oil
1tspbaking powder
1.5tspvanilla extract
1tspcinnamon
1/8tspsalt
Semi-sweet chocolate chipsoptional
Instructions
Preheat oven to 350°F and grease or line an 8x8 baking dish with parchment paper.
In a food processor or blender, combine black beans, eggs, sugar, cocoa powder, oil, baking powder, vanilla, cinnamon and salt. Blend until smooth and there are no whole beans are visible.
Pour the batter into the greased or lined baking dish and sprinkle chocolate chips on top (optional but highly recommended).
Bake for ~25 minutes or until an inserted toothpick comes out clean.
Let the brownies cool for at least 10 minutes before they are removed from the pan. Enjoy!
Notes
For a holiday inspired twist, crushed candy canes are a great substitute topping instead of or in accompaniment with the chocolate chips. This recipe is adapted from mysanfranciscokitchen.com.
