1/3cupoatscan be quick oats, large flake oats or even oats ground up into a flour-like consistency
1/3cupcottage cheese
1egg
1/2tsp vanilla extract
1/2tspcinnamon
2tbspmilk
1tbsppeanut butter*or almond butter
1/2mediumbananasliced

Instructions
Over medium heat, warm up a frying pan and coat with cooking spray, 1 tsp coconut oil (gives a great flavour) or 1 tsp butter.
In a small bowl, combine all ingredients except for the banana and mix well. Add this to the frying pan and spread out evenly. Cook for 3-4 minutes or until the underside of the batter is lightly browned.
With a spatula or flipper, flip the batter over to start cooking the other side. Break the batter up so that it is in chunks. Cook for 2-3 minutes.
Scramble the batter once more to ensure everything is cooked through and then transfer to a serving bowl.
Top with the sliced banana and any other preferred options. Sprinkle some ground flax seed on top for additional fibre. Enjoy!

*You can add the peanut butter directly into the batter or add it in at the end as a topping.
