Peanut Butter Banana Protein Oatmeal

Ingredients

  • 1/3 cup oats can be quick oats, large flake oats or even oats ground up into a flour-like consistency
  • 1/3 cup cottage cheese
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 tbsp milk
  • 1 tbsp peanut butter* or almond butter
  • 1/2 medium banana sliced

Additional topping suggestions:

  • Berries
  • Greek yogurt
  • Flax seeds ground
  • Milk

Instructions

  • Over medium heat, warm up a frying pan and coat with cooking spray, 1 tsp coconut oil (gives a great flavour) or 1 tsp butter.
  • In a small bowl, combine all ingredients except for the banana and mix well. Add this to the frying pan and spread out evenly. Cook for 3-4 minutes or until the underside of the batter is lightly browned.
  • With a spatula or flipper, flip the batter over to start cooking the other side. Break the batter up so that it is in chunks. Cook for 2-3 minutes.
  • Scramble the batter once more to ensure everything is cooked through and then transfer to a serving bowl.
  • Top with the sliced banana and any other preferred options. Sprinkle some ground flax seed on top for additional fibre. Enjoy!

Notes

*You can add the peanut butter directly into the batter or add it in at the end as a topping.
