Almond Flour Strawberry Banana Bread

Ingredients

  • 2 1/2 cups almond flour
  • 1/3 cup brown sugar
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 3 eggs
  • 2-3 medium-sized bananas mashed
  • 1 tsp vanilla extract
  • 1 1/2 cups sliced California Strawberries
  • 1/4 cup chopped walnuts or almonds optional

Instructions

  • Preheat the oven to 350ºF and line a bread pan with parchment paper.
  • In a large bowl mix together the eggs, mashed bananas and vanilla extract.
  • In another bowl, mix together the almond flour, brown sugar, cinnamon, nutmeg, salt and baking powder.
  • Fold the dry ingredients into the wet ingredients and stir until combined. Fold in the sliced California Strawberries and chopped nuts (optional).
  • Pour the batter into a loaf pan and bake for 35-45 minutes or until an inserted toothpick comes out clean. 
  • Allow to cool completely before slicing. Serve and enjoy!

Notes

Tip: If you would like to make this recipe into muffins instead, reduce the cooking time to 20-25 minutes.
