Ingredients
3/4cupalmond butter
1/3cupgranulated sugar
1egg
1tbspfancy molasses
1tspvanilla extract
1tspcinnamon
1/2tspginger powder
1tspbaking soda
Pinch of salt
Spiced sugar
2tbspgranulated sugar
1/2tspcinnamon
Pinch ofground ginger
Instructions
In a medium sized bowl, combine the batter ingredients and mix well. Place in the freezer for 1 hour.
Preheat oven to 350 degrees Fahrenheit and cover a cookie tray with parchment paper.
In a small bowl, combine the spiced sugar ingredients well.
Remove the batter from the freezer. Using a large spoon, scoop out a tablespoon of dough at a time and form into a ball. Roll this into the spiced sugar until evenly coated and place on the cookie tray.
Fill the tray with cookies, making sure they are evenly spaced from each other. Bake for 6-8 minutes or until they start to crack on top and the bottoms are browning.
Allow the cookies to cool before removing from the pan (be careful, they are fragile!) and enjoying them!
