Almond Butter Ginger Molasses Cookies

Ingredients

  • 3/4 cup almond butter
  • 1/3 cup granulated sugar
  • 1 egg
  • 1 tbsp fancy molasses
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp ginger powder
  • 1 tsp baking soda
  • Pinch of salt

Spiced sugar

  • 2 tbsp granulated sugar
  • 1/2 tsp cinnamon
  • Pinch of ground ginger

Instructions

  • In a medium sized bowl, combine the batter ingredients and mix well. Place in the freezer for 1 hour.
  • Preheat oven to 350 degrees Fahrenheit and cover a cookie tray with parchment paper.
  • In a small bowl, combine the spiced sugar ingredients well.
  • Remove the batter from the freezer. Using a large spoon, scoop out a tablespoon of dough at a time and form into a ball. Roll this into the spiced sugar until evenly coated and place on the cookie tray. 
  • Fill the tray with cookies, making sure they are evenly spaced from each other. Bake for 6-8 minutes or until they start to crack on top and the bottoms are browning.
  • Allow the cookies to cool before removing from the pan (be careful, they are fragile!) and enjoying them!
