Garden Salad with Tuna

Ingredients

  • 4 cups leafy greens (spinach and kale are preferred)
  • 1 can chunk tuna in water
  • 1 cup cucumber diced
  • 1 cup tomato diced
  • 1/2 cup carrots diced
  • 1 avocado sliced OR 3 tbsp goat cheese
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  • In a large bowl, toss all ingredients together.
  • Drizzle with olive oil and balsamic vinegar* and season with salt and pepper. Easy peasy!

Notes

*If you are making this salad the night before eating it, wait until the day of to add the olive oil and vinegar.
