Mexican Black Bean Salad

Ingredients

  • 2 ears corn
  • 40 cherry tomatoes halved
  • 1 can black beans rinsed and drained
  • 2 avocados
  • 1 red onion diced
  • 1/4 cup cilantro chopped

Dressing

  • 2 tbsp olive oil
  • 2 limes juiced
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Prepare all the ingredients as listed above and add them to a large bowl.
  • In a small bowl or measuring cup, whisk together the dressing ingredients and toss gently into the salad.
  • Serve as a side dish, with tortilla chips, or in a pita!
