Thai Sautéed Vegetables

Ingredients

  • 2 cups fresh vegetables (asparagus, broccoli, zucchini, red pepper, etc.) chopped
  • 1/2 tsp red pepper flakes
  • 1 tbsp sesame seeds
  • 2 tsp fish oil
  • 1 1/2 tbsp soy sauce
  • 1 close garlic pressed
  • 1/8 cup water

Instructions

  • In a sauce pan on medium heat, lightly toast the red pepper flakes and sesame seeds for ~1 minute, until golden. Remove from pan and set aside.
  • To the same sauce pan, add fish oil, soy sauce, garlic and water. Mix to combine. 
  • Add the vegetables to the sauce and sauté for 5-7 minutes, or until they reach a desirable texture. You may need to add more water as it boils off and evaporates.
  • Once cooked, transfer the vegetables to a plate and top with toasted red pepper flakes and sesame seeds. Enjoy!
